1	Egg White
3/4 oz	Fresh lemon juice
3/4 oz	Rosemary syrup
1 1/2 oz	Marconi 42 Gin
1/4 oz	Heirloom Alchermes
1/4 oz	Heirloom Genepy
1 dash	All Day Bitters

In a coupe, combine the Alchermes and Genepy. Ignite the liqueurs and allow to the flame to burn for 15 seconds, then cover the coupe to extinguish the flame. Add all of the ingredients to a cocktail shaker and then fill with ice. Shake with a fluid, strong motion. Strain and remove ice. Return drink to cocktail shaker and shake with a fluid, strong motion and strain into cocktail glass.

For a low ABV variation, use N/A gin.
