1	Egg white
3/4 oz	Fresh lemon juice
1 oz	Demerara syrup
2 oz	Bourbon
2 dashes	All Day Bitters

1/2 oz red wine float

Add all of the ingredients to a cocktail shaker and then fill with ice. Shake with a fluid, strong motion. Strain and remove ice. Return drink to cocktail shaker and shake with a fluid, strong motion and strain into cocktail glass. Gently touch the surface of the cocktail with a barspoon. Pour 1/2 oz of red wine down the handle of the barspoon so that it floats atop the cocktail.

For a low ABV variation, use N/A whiskey.
