Mix

1/2 cob	Fresh sweet corn kernels
3/4 oz	Fresh lemon juice
1/2 oz	Tapped Cherry Bark Vanilla Maple Syrup
1 1/2 oz	White rum
2 oz	Ginger Beer
1 dash	Bittercube Jamaican No. 1 Bitters
1	Bittercube Cocktail Cedar

½ oz Float of Heirloom Alchermes, Corn Husk, Lime Wheel and Cilantro

Muddle corn kernels in a cocktail shaker. Add all of the ingredients except ginger beer to the cocktail shaker and then fill with ice. Shake briefly with a fluid, strong motion. Add ginger beer to the shaker and strain into glass. Using the back of a bar spoon, slowly pour the Alchermes over the spoon to float liqueur at the top of the cocktail.

For a non-alcoholic variation, use N/A rum.

*To smoke a glass and impart a robust cedar aroma, ignite a Bittercube cocktail cedar, then invert a glass over the flame to fill with the smoke. Place inverted glass and cedar on a plate or flame resistant surface until the cocktail is ready to strain into the glass.
