3 dashes	Pufferfish Bitters Blend
1/2 oz	Fresh lemon juice
1/4 oz	Fresh grapefruit juice
1/2 oz	Salted honey-demerara syrup
3/4 oz	J. Henry Straight Wisconsin Bourbon
3/4 oz	Wollersheim Two Mile Bourbon
1 oz	Heirloom Espresso Martini
2 oz	Top Note Classic Tonic

Grapefruit peel expressed & inserted

Add all of the ingredients except tonic to the cocktail shaker and then fill with ice. Shake briefly with a fluid, strong motion. Add tonic to the shaker and strain into glass.

*Salted honey-demerara syrup:

10 g Pink sea salt

50 g Water

200 g Demerara sugar

200 g Water

11 oz Clover honey

Instructions: Dissolve 10g pink sea salt into 50g of hot water, reserve in an eyedropper bottle. Combine 200g demerara sugar and 200g hot water and whisk until sugar is dissolved. Combine demerara syrup with equal parts by volume of clover honey (approximately 11oz). For every ounce of honey-demerara syrup, add one drop of pink sea salt solution. Refrigerate for up to two weeks.
